Creamy zucchinis pasta
Ingrédients
- 1 1/2 pounds zucchinis
- 1 Tbsp dehydrated shallots
- 1/2 tsp garlic powder
- 1 tsp creamy pesto
- 1/2 pint heavy whipping cream
- 2 oz grated parmesan
- 1 pound long pasta
- salt and pepper
- olive oil
Instructions
- Cut the zucchinis into slices and cook them on low heat in a large pan with olive oil.
- Add salt and pepper, shallots, and garlic.Cover and let cook until zucchini is softened.
- Add the cream, the pesto, and the parmesan.Mix with a hand blender.
- Cook the pasta, drain and mix with the sauce.
